Quick 'N Hearty Vegetable Barley Soup

Ingredients
1/2 Cup chopped onion1 Clove Garlic, minced5 Cups Water1 14 1/2 oz. can tomatoes (if whole cut them up)3/4 cup Quick Barley2 cups vegetable broth1/2 teaspoon dried basil1 Bay leaf1 9-oz. pkg. frozen veggies
Directions
In a pot add onion and garlic and a little EVOO (extra virgin olive oil) until onions are soft. Stir in remaining ingrediants except frozen veggies. Cover, bring to a boil. Reduce heat; simmer 10 mins, stirring occasionally. Add frozen veggies, cook about 10 mins. or until veggies are tender. Additinal water may be added if soup becomes to thick upon standing
Serves 8 one cup servings
