Vegetarian Chipotle Chili

Ingredients
1 tbsp canola oil1 medium onion, finely chopped2 cloves garlic, finely chopped1 tsp paprika2-3 tsp ground chile1 tsp oregano1 tsp cumin1 finely minced chipotle chili in adobo1 14-oz can diced tomatoes1 14-oz can black beans, drained and rinsed1 14-oz can kidney beans, drained and rinsed1 tsp saltsour cream, chopped fresh cilantro, and chopped red bell pepper for garnish
Directions
Heat the oil in a soup pot. When hot, add the onion and saute on medium heat for 7-8 minutes. Add the garlic, chiles, cumin, and oregano, saute a couple of minutes more. Add the tomatoes, beans, and two tomato-cans of water. Lower the heat and simmer 25-30 minutes.

When ready to eat, garnish with cilantro, red pepper, and a spoonful of sour cream.
