Lentil Oatmeal Chocolate Chippers

1 cup brown sugar 3/4 cup margarine1 egg1 1/2 tsp vanilla3/4 cup lentil puree1 1/2 cup flour1/2 tsp salt 1 tsp baking soda2 cups quick-cooking rolled oats1 1/2 cup chocolate chips3/4 cup chopped pecans
Preheat oven to 375ºF. Cream together sugar and margarine. Add egg, mix until blended. Add vanilla and lentil puree, and mix until blended.
Sift flour, salt and soda together. Add this flour mix 1/3 at a time to the creamed mixture.
Add oats, chips and nuts, blend lightly. Scoop out 1 tsp portions onto a greased cookie sheet, and flatten with a fork.
Bake 12-15 minutes. Don't overbake.
Serving Size: Makes 48 - 1.5 inch cookies, or 36 - 2 inch cookies.
