PrairieHarpy's Slow Cooking Neufchatel Chicken

3 pounds boneless, skinless chicken (Nutritional info uses breast meat, altho I use thighs personally.)1/4 cup Italian Dressing (I used Wish-Bone Robusto.)Quick spritz of cooking oil (I use one healthy spray of Mazola Pure Cooking Spray, Olive Oil.)1 small onion, chopped1 clove garlic, chopped1 can cream of chicken soup (I used Campbell's Healthy Request.)8 oz Neufchatel cheese (I used Philly.)1/2 cup reduced sodium chicken broth
Place chicken in the slow cooker and coat with dressing. Cook on low for 4 to 6 hours.
LATER ON... In a medium saucepan, saute onions and garlic in cooking spray for a minute or two. Add cream of chicken soup, chicken broth, and Neufchatel. Stir until consistent.
Add the pan mixture to the slow cooker, and let the slow cooker have at it for one more hour.
To get serving size, I assumed a 3oz portion of chicken. (Divided 3 pounds of chicken by 3oz to get 16 servings.) This should make approx 16 ladylike half portions.
Neufchatel is almost exactly like cream cheese but has less calories and fat. I buy the Philadelphia brand. It is usually right there by the regular cream cheese. I rarely use regular cream cheese anymore, and the FF cream cheese doesn't seem to work right in many recipes.
I usually serve some veggies on the side and a little bit of fresh fruit for a nice dessert. You could probably throw some veggies right into the slow cooker for an easy one-dish meal!

I think I maybe way overcooked it in the slow cooker but it was falling off the bone and oh so good. It wasn't however chicken pieces. It was like a stew. But thick. I served it with noodles and it was delicious. It did however need salt and seasoning. I used grinder sea salt with garlic. Aok - 4/14/08
