Italian Meatloaf Muffins

Ingredients
1.25 lb. Ground Turkey1 egg, beaten1 can diced tomatoes, drained1/4 cup Italian bread crumbs1/2 cup Parmesan cheese, divided1 bell pepper, minced2 cloves garlic, minced1 tbsp. crushed red pepperItalian seasoning to taste - may use 1/2 package of Good Seasons Italian dressing mix
Directions
Preheat oven to 400.
Mix all ingredients (except 1/4 cup of Parmesan) in large bowl. Scoop mixture into muffin tin. Makes 14 medium sized muffins. Top each with a sprinkling of the remaining parmesan.

Bake for 25 minutes or until a light crust has formed on top of the muffin.

    This was pretty good. I did make a few modifications. Added chopped spinach and onion and didn't use the Good Seasonings. Also only used 1/4 of the parmesan cheese since I forgot to add the rest at the end. - 11/7/16

    These were amazing! I made some subs. due to ingredients on hand, used panco instead of bread crumbs and southwestern egg beaters. I used diced tomatoes with green chilies so I left out the red pepper flakes. I also mixed in some ground chicken and grated 1/2 an onion.
