Salmon Patties

Ingredients
1 Pouch/can 9 oz. WILD CAUGHT pink salmon-Well drained1 egg lightly beaten1/2 Joseph's Flax/oat/wheat pita2-3 green onions finely chopped1 t. dried parsleysalt & pepper and seafood seasoning (be careful salmon has some salty taste) To taste 1-2 Tbs. Extra virgin Coconut oil for frying Optoinal:2-4 Tbs. 1/3 less fat cream cheese
Directions
Place pita on microwavable plate and microwave 1 minute. When cooled crumble into fine crumbs or put in coffee grinder. Heat 1-2 Tbs. extra virgin coconut oil in frying pan. Combine all ingredients, except oil in small bowl. Form patties and fry in heated oil till brown on both sides. For a less dry version you could add the cream cheese or even a Tbs. or mayonnaise (NOT Miracle whip) to make it creamier.
