"Anytime" Salmon Burgers

Ingredients
1 can of drained salmon, bones removed if wish. Separate into flakes so easier to work with. 1 cup of saltine crackers (approx. 7)--can use unsalted1/2 cup finely chopped onions (if wish some added color, I also used red onion and green peppers)2 beaten eggs2 tsp of lemon juice, fresh or bottled1 TB chopped parsley, fresh or dried (can also use dill or thyme for a different flavor)1/4 tsp garlic powder (I prefer this over salt for true garlic flavor)--could use minced fresh garlic.1-2 TB vegetable oil for cooking the burgers in.Note: whenever I make a recipe, I like to reduce the sodium at every chance I can. I also like to experiment with different colors and flavors. You could try other seasonings to give a different flavor.
Directions
Drain and flake the canned salmon. I removed the bones although they are edible (additional source of calcium and Omega-3). Combine all of the ingredients except for the oil which you will add to a frying pan. Shape into 6 burgers. Heat the vegetable oil and cook the burger over medium heat until both sides are brown and heated through.

Prep Time: 25 mins.

Serving Size: makes 6 well formed fish patties
