Ryan's Chinese Fried Rice

White, Medium Grain Rice - 4.5 cups cooked, day oldCarrots, Diced - 1 cup Celery, Diced - .5 cupWhite Onion, Diced - .5 cupFresh, large Eggs - 2Wesson 100% Pure Vegetable Oil - 3 TBSPKikkoman Soy Sauce - 3 TBSPBlack Pepper - .5 tsp., taste
Steps:
1. Cook rice the day before,
2. Place your pan or wok on medium high to high heat.
3. Add .5 tbsp. of the vegetable oil to your pan or wok and the 2 scrambled eggs. Don't over the scrambled eggs. Once done remove from the pan.
4. Next add the remaining oil to the pan and then add the diced carrots and diced celery, and cook for 1 minute.
5. Next add the diced onion.
6. Add the rice, break up any and all clumps.
7. Toss all the ingredients and cook for 3 minutes.
8. Now add the soy sauce and black pepper and toss all the ingredients and cook for another 2-3 minutes.
