Breakfast Cookies

Ingredients
1/2 cup butter1/2 cup granulated sugar1/2 cup liquid honey1 egg1 tsp vanilla1-2/3 cup whole wheat flour6 tsp ground flaxseed2 tsp baking powder1/4 cup 1% milk1/2 cup dried cranberries1/2 cup chopped dried apricots2 cups cornflakes1 cup rolled oats
Directions
line 2 baking sheets with parchment paper. preheat oven to 350f. using an electric mixer, beat the butter, sugar and honey in medium bowl until creamy. add egg and vanilla and beat until well combined. combine remaining ingredients before adding to the honey mixture. stir until combined. drop rounded tablespoon of cookie batter on the prepared baking sheets about 2" apart. bake for 15-20 minutes or until cookies are golden (swap baking sheets around halfway through). Place cookies on a wire rack to cool. cool completely before storing. makes about 24 cookies.
