Mexican Quinoa with Chicken

1 tablespoon of olive oil4 cloves of garlic - minced1 medium onion - diced1/2 cup of tomato paste3/4 cup of quinoa2 medium tomatoes - diced4 skinless chicken thighs, bone removed1.5 cups of water1 tbsp cumin2 tbsp chili powder
Put the oil in a pan, let it heat up (medium heat), toss in the garlic and onions, let them saute, then put in the tomato paste and sorta melt it. Add the quinoa, let it brown a bit, add the diced tomatoes the cumin and chili powder. Add the water and stir, then add the chicken, leave on medium heat for a bit, covered though, then check on it and reduce the heat after 10 minutes and led it reduce down so the water is gone. That's about it.
