Southwestern Bean Salad

Ingredients
Salad:4 cans black beans (about 9 cups), drained & rinsed1 bunch fresh cilantro, raw1 medium bell pepper1/2 cup chopped red onionDressing:1 jalapeno pepper (fresh or pickled/canned) or more to taste1/4 cup extra virgin olive oil1 cup lime juice2 Tbsp ground cumin seed1 tsp salt
Directions
Drain and rinse beans and add to a large bowl. Pulse cilantro in food processor and add to beans. Chop bell pepper and red onion and add to beans.

For the "dressing," add remaining ingredients to food processor and process until completely combined. Pour dressing over bean mixture. Stir to combine. Refrigerate several hours or overnight.
