M's Grilled Stuffed Portobello Mushrooms

Ingredients
Portobello Mushroom 1 largefresh tomatoes-chopped 1 cupgreen bell pepper 1/2 pepper- sliced in stripsGarlic-diced 2 clovesSweet onion diced-3 Tbsps.Shrimp 8 large raw- cut in small piecesSpinach- 1 cup cleaned and tornBlack pepper (to taste)Oregano (to taste)Buffalo Mozzarella Cheese 2 ozs.-tear into small piecesOlive Oil 0.5 Tbsps.
Directions
Heat up grill on high
Brush top of mushroom with olive oil
Place on grill, lower heat to medium- grill till softened turn briefly, remove from grill
On stovetop, sauté garlic, onions, peppers and tomatoes in olive oil till softened. Add seasoning,
Add shrimp and cook for one minute, add spinach, turn off heat and cover for several minutes until spinach is wilted and shrimp are cooked through
Spoon mixture into underside of Portobello mushroom. Top with mozzarella cheese, place back on grill (on aluminum paper) on low
close grill till cheese melted. Serve and Enjoy!
