Sweet Potato Quesadillas

Ingredients
1-12 c. chopped onion2 cloves garlic, minced2 tsp. dried oregano1-1/2 tsp. dried basil1-1/2 tsp. dried marjoram1-1/2 tsp. chili powder1-1/2 tsp. cumin2-1/2 c. mashed cooked yams1-1/2 c. black beans6 flour tortillas1-1/2 c. shredded cheddar cheese
Directions
Saute onions and garlic with a little oil till translucent and browned at the edges. Add oregano, basil, marjoram, chili powder, and cumin and cook another minute. Add yams and heat through, stirring frequently to prevent sticking. Season with salt and pepper to taste. To assemble the quesadillas, spread about 1/2 c. filling and 2 T. cheese on half of each tortillas, leaving a 1/2 inch border on the sides. Fold tortilla in half. Place on oiled baking sheet. Brush tops with oil and bake at 400F till browned, about 15-20 minutes. Serve with sour cream and salsa. (2 servings per quesadilla). If making ahead to serve as appetizers, flip over so top edge doesn't curl and let cool, then cut each into 4 wedges. Makes 24 servings as an appetizer.
