Strawberry Rhubarb Pie

Ingredients
1 lb Rhubarb (2-3 cups), diced2 pints strawberries, halved1/2 cup flour1 cup sugardouble pie crust1 egg yolk2 Tbsp sugar1 Tbsp Butter
Directions
Heat oven to 400F. Mix flour, sugar and add to strawberries and rhubarb. Let stand for 30 minutes. Pour filling into pie curst. Dot with butter and cover with other pie crust. Apply yolk to top, sprinkle with 2Tbsp sugar and vent. Bake at 400F for 35-40 minutes.

    Made this today and as I was unknowingly low on sugar, I cut the sugar in half. Results in a more tart pie, but otherwise very good! Oh, and I made it as an open top pie...cutting out the additional pie crust, the butter and the egg. - 5/20/12
