Cheese & Spinach Manicotti

Ingredients
Manicotti Noodles, 8 oz (2) 15oz containers Frigo Low Fat Ricotta Cheese(1) 260z jar Classico Sun-Dried Tomato Sauce,Spinach, fresh8 cloves of garlic, minced (divided)1 cup Parmesan Cheese, gratedOlive Oil, 1 1tsp(1) 28oz can Crushed TomatoesFresh Basil
Directions
Cook pasta according to package directions. Rinse and set aside.

In a large sauce pan combine crushed tomatoes, 2 cloves of garlic, fresh basil (to taste) and jar of sauce. Warm over medium heat.

Meanwhile, add olive oil to a skillet over medium heat. Saute garlic until tender. Lower heat and add chopped spinach. Stir constantly until spinach is wilted.

Mix cheeses in a large bowl and add spinach and garlic mixture. Stir well.

Spray 9x13 baking dish with non-stick spray. Pour 1/3 of sauce into baking dish. Stuff cooked manicotti evenly with cheese mixture and lay on top of sauce in rows in the baking dish. Pour remaing sauce over filled manicotti.

Bake for 30-35 minutes at 350 degrees or until warmed through.

Serve with grated parmesan on top if desired.
