Apple Sauce Oatmeal Muffins

Wet:1 cup old fashion rolled oats (not instant)1 cup non-fat milk1 cup whole wheat flour1 Medium Apple, Chopped1/2 cup unsweetened applesauce2 egg whitesDry:1/4 cup brown sugar1/4 cup Splenda1 tsp. baking powder1/2 tsp. baking soda1/2 tsp. salt2 tsp. cinnamonFor topping:1 tsp. cinnamon1 tsp. sugarraisins or nuts (optional)
Soak the oats in milk for about one hour.
Preheat the oven to 400 degrees.
Spray muffin pan with cooking spray.
Combine the oat mixture with the chopped apple, applesauce and egg whites, and mix until combined.
In a separate bowl measure and whisk the dry ingredients together. (Leave out Cinnamon and Sugar for topping)
Add wet ingredients to dry and mix until just combined. Add nuts or raisins if desired.
Do not over mix the batter or the muffins will be tough. Spoon muffin mixture into muffin pan.
Combine the cinnamon and sugar and top each muffin with some of the mixture.
Bake for 20-25 minutes or until done.
Remove from pan, cool and enjoy.
These can be frozen and reheated in the microwave for a quick breakfast.

DD: I followed the recipe to a T mom. But the batter was really soupy.

i altered the recipe just a smidgen.... if you don't have time to soak the oatmeal, it's cool, microwave them. Just for about a minute and a half, make them soft. I also made it with unsweetened almond milk. 35 cal a cup!! i also switcheed the applesauce for a banana and added pecans! delicious! - 2/18/12

I have made a substitution for the Splenda to an equal amount of Agave syrup which I mixed into the wet ingredients. The flour, which is listed as a wet ingredient, I mixed into the dry grouping instead. It smells heavenly baking. They are moist and tasty, and I will make them again. - 5/13/10
