Spanish Rice & Beef

Ingredients
1 lb of lean ground beef1 onion1 green bell pepper2 cans (32 oz) of stewed tomatoes1 cup Mahatma uncooked long grain rice1 cup water1 tsp chili powder1 tsp oregano1/2 tsp garlic powder
Directions
1. Cooked ground beef, chopped onion and green pepper in dutch oven until meat is browned.
2. Drain in colander, pat dry with a paper towel and clean pan with paper towel.
3. Return meat mixture to dutch oven, stir in remaining ingredients. Bring to a boil; cover, reduce heat and simmer for 30 minutes or until rice is tender, stirring occassionaly.

    This was wonderful but I substituted ground buffalo sausage for the beef and used two cans of Rotel Tomatoes instead of the onions, peppers, and stewed tomatoes (saved a lot of time). Also added fresh mushrooms and used brown rice. - 4/7/08

    I added 1/2 tsp. ground cumin, eliminated the bell pepper, and added an extra 1/2 tsp. chili powder. I also used a brown long grain rice, which increased the cooking time to 50 minutes, but the nutty taste blended wonderfully with the spicy nature of the "chili". Definitely a hit at our house! - 2/4/09

    For more spice I used one can of Rotel and one can of diced tomatoes. Also used brown rice and cooked a bit longer (10 min.). - 3/31/08

    This was great! I took other people's advice and was generous with the spices. Next time I will add even more. My rice was still a bit hard after over an hour so I'll let it simmer longer next time. - 4/17/09

    If the rice was too hard that means that you did not have enough liquids. Maybe add 1/2 c of water to it. - 6/2/09
