Ingredients
3 T. fresh lemon juice1 T. red wine vinegar1/4 tsp. dry oregano1 garlic clove smashed into a pasteSalt and Pepper1/4 c. olive oil 1 cup uncooked quoina2 cups red and yellow grape tomatoes1 c. pitted kalamata olives, sliced2 green onions, thinly sliced2 pickled cherry peppers diced1 small red onion, thinly sliced1/2 English cucumber, diced smallFeta for sprinkling
Directions
Whisk together Lemon juice, vinegar, oregano. Add salt and pepper to taste. Slowly drizzle in olive oil and whisk to emulsify.
Rinse quoina in a strainer. Combine quoina and two cups of water in a sauce pan and bring to a boil. Simmer for 15 minutes until water is all absorbed. fluff with a fork and add dressing and chopped vegetables. Chill and serve.
