2 boneless, skinless chicken breasts cut into smaller pieces2 cups broccoli florets1 cup sliced carrots1/2 cup no-salt cashews4 tablespoons rice wine vinegar3 tablespoons ketchup1 tablespoon brown sugar1 garlic clove minced1 tablespoon ginger paste1/4 teaspoon red pepper flakes1/2 cup chicken broth
Layer chicken, vegetables and cashews in bottom of crockpot. Combine remaining ingredients except broth and pour over ingredients in crockpot. Add broth as needed during cooking process. Cook on high, 2-4 hours or cook on low for 4-8 hours.
