Crockpot Chicken Taco Stew

Ingredients
1 onion, chopped1 16 oz. can black beans1 16 oz. can kidney beans1 16 oz. can corn (drained)1 8 oz. can tomato sauce2 14.5 oz cans diced tomatoes w/chilies1 1.25 oz packet taco seasoning2 boneless skinless chicken breasts
Directions
Mix everything together in a slow cooker except chicken. Lay chicken on top and cover. Cook on low for 6-8 hours or on high for 3-4 hours. 30 minutes before serving remove chicken and shred. Return chicken to slow cooker and stir in. This is good eaten with cheese, sour cream, or tortilla chips.

    Great flavor with the taco seasoning. I used one more can of corn, and a large jar of salsa instead of the can of tomato sauce and insead of the two cans of diced tomatoes. I also added 2 cups whtie rice and 4 cups of water. Husband loved this. Oh, and no onions because I used the salsa. - 9/6/10

    This was a great crock pot recipe! I only had dried black beans, so I soaked them overnight before adding them. I didn't have taco seasoning, but I know how to season Mexican food, so I did that myself. This is very tasty, and I'm glad I made it! - 2/22/10

    I made this recipe and just fell in love with it..The ingredients were all something I had on hand..it was easy assemble..the only change I made was ..I didn't use a crock pot to make it. I assembled all ingredients..and cooked the chicken previous to the assemblage..so just heating all ingredients. - 3/19/10
