Slow Cooker Apple Pecan Blondie Oatmeal

**This recipe uses a smaller slow cooker, 1 1/2 to 2 quarts1/2 cup (40g) steel-cut oats2 cups (500ml) unsweetened coconut milk1 small apple, chopped1/2 teaspoon vanilla1/2 teaspoon maple extractSweetener of choice, to taste (I used 1 Nu Stevia, but if you don’t have maple extract use maple syrup or brown sugar to get that “blondie” flavor)Handful of chopped pecans, for topping
The night before: Spray your crock with some oil to help with clean-up later. Add all the ingredients except the sweetener and nuts. Cook on low overnight (7 to 9 hours).
In the morning: Stir your oatmeal well and add sweetener. It may seem watery at the top, but if stirred, it should be a more uniform consistency. Top with chopped pecans.

At first I was not a huge fan, I thought it good but I personally like my oatmeal undercooked so it has a lot of texture and nuttiness to it. But as I continued to eat it, I realized the more I liked it. Gives me a new variety for cooking. Very convenient to wake up to breakfast already for me. - 11/3/14

I woke up this morning to the smell of coconut in my apartment. So appealing. I added some apple pie spices (cinnamon, cardamon, allspice, nutmeg) to it when I woke up, and let those heat into it. Can't wait to have it again tomorrow morning. Also, I used two apples as my apples are *really* small. - 12/16/15
