1 lb Honeysuckle white Italian sausage600 grams red potatoes, sliced with skin (about 8 small potatoes)1 medium sweet onion, sliced1 Tbsp minced garlic1 Tbsp Italian seasoningRed pepper flakes (to taste)3 14 oz. cans vegetable broth1 Tbsp. Flour1 cup fat free sour cream1-4 cups fresh spinach or kale
Brown sausage. Place in slow cooker. Brown onions then deglaze pan with vegetable broth. Place onions, potatoes, garlic, seasonings and vegetable broth in slow cooker. Cook 5-6 hrs. On low, or 3-4 hours on high until potatoes are fork tender. Stir flour into sour cream. Slowly add to soup, stirring to prevent lumps. Cook for another 15 min as soup thickens slightly. Add fresh spinach just before serving.
