2.5 pounds lean pork or beef roast, chopped in 1" pieces*2 small red potatoes, chopped*2 medium yellow onions, diced6 garlic cloves8oz pacakge sliced mushrooms3 cups butternut squash, diced1 cup diced brocolli stalks (or celery)4 cups beef broth1 cup chopped carrots1T soy sauce2T worchestershire sauce1T basil1T paprika4 Bay leavessalt and pepper to tastepotatoes and meat removed from nutritional info, as changing those numbers gives the easiest method of adjusting for personal calorie, carb, and protein needs/wants. Simply enter them in extra the meal in the tracker
Spray crock pot or use a liner. Thank me later
Chop onions and place in bottom
Chop meat and place in next layer
Chop up rest of veggies and potatoes and squash and place on top
Sprinkle in spices along the way
Pour Beef broth over the top
Cook on high for 4-6 hours or low for 8
Can add a flour and butter mixture in at the end to thicken if desired.
Serving Size: Makes 6 decent sized bowls. I eat 1.5 servings
