Mixed Vegetable Curry

1 Tbsp extra virgin olive oil1 large onion, finely chopped1/2 inch cube of ginger, peeled and finely sliced1 tsp ground turmeric1 tsp ground coriander1 tsp ground cumin1 tsp paprika4 small ripe tomatoes, skinned and chopped, or a small can of tomatoes with juice225 g/8 oz potatoes, peeled and diced75 g/3 oz green beans100 g/4 oz carrots, peeled and chopped75 g/3 oz peas, shelled weight450 ml/15 fl oz warm water2 whole fresh green chillies1 tsp garam masala1 tsp salt or to taste
1. Heat the oil over medium heat and fry the onions until they are lightly browned (6 - 7 minutes)
2. Add the ginger and fry for 30 seconds.
3. Adjust heat to low and add the turmeric, coriander, cumin and paprika. Stir and mix well.
4. Add half the tomatoes and fry for 2 minutes, stirring continuously.
5. Add all the vegetables and the water. Stir and mix well. Bring to the boil, cover and simmer until the vegetables are tender (15 - 20 minutes).
6. Add the remaining tomatoes and the green chillies. Cover and simmer for 5 - 6 minutes.
7. Add the garam masala and the salt, mix well.
8. Put the curry into a serving dish. Devour.
