Seafood Kabobs

Ingredients
1 # White fish1-2 # *Raw Shell on Shrimp1-2 Green Bell Peppers1 Can Pineapple Chunks 2 Fennel Bulb1/4 Olive Oil3 T Lemon Juice4 cloves minced Garlic3 tsps Fresh Oregano
Directions
Rinse fish, pat dry - cut into 1" chunks. Peel and devein shrimp leaving tails intact.

Cut off and discard upper stalks of fennel bulb, save some of the fronds Keep 2 T of the fronds for use in the marinade. Cut off thin slice from bottom of bulbs, wash and dry bulbs, cut each bulb into 6 sections. Put in pot with a little water and boil for about 5 minutes until nearly tender. You can cook pepper at the same time but in a separate pot so as not to mix flavors.

Make marinade from olive oil, lemon garlic oregano and salt . Place fish, shrimp and wedges into a plastic bag add marinade to bag and let sit for about 2 hours drain.

Thread on skewers alternating Fish , peppers , shrimp and pineapple. Place on a greased rack on grill over medium hot coals uncovered about 9-12 minutes, turning often. Or cook on an indoor grill directly on grill.
