Swiss Steak in the Crockpot

Ingredients
1.5 pounds beef bottom round, trimmed of excess fat 2 teaspoons kosher salt 1 teaspoon freshly ground black pepper 3/4 cup all-purpose flour 1/4 cup vegetable oil or bacon drippings 1 large onion, thinly sliced 4 cloves garlic, minced 1 (10.5-ounce) can diced tomatoes 1 can tomato sauce 24 oz1 teaspoon smoked paprika 1 teaspoon dried oregano 2 tsp Worcestershire sauce 1 cups beef broth3 red bell peppers - sliced into rings
Directions
Cut the meat with the grain into 1/2-inch thick slices. Place the flour, salt, pepper, and paprika in a pie pan and dredge the pieces of meat on both sides in the flour mixture. Brown the meat in vegetable oil. Set meat aside and wipe out the pan. Sautee garlic in oil, and then add beef broth and oregano till reduced by half. In crock pot add 1 can of rot el diced tomatoes and then a layer of pepper rings, onions, and then meat and repeat till done. Add beef broth and tomato sauce and cook in crock pot on low for 7-8 hours.

    Very good--but, really, 12 servings out of 1.5 lbs.? That's only 1-1/2 oz. of meat per person. Sounds like someone was fudging to make the calorie count lower. I will either make every portion 2 servings or re-enter the recipe as 6 servings. - 8/28/15
