Chickpea and Spinach Salad

Ingredients
2 15 oz cans Chickpeas drained and washed1/4 cup chopped Parsley1/2 cup chopped red onion 1/4 cup Olive Oil3 TBS Lemon Juice1/2 tsp lemon zest 1 1/2 tsp ground cumin 4 cups spinach 2 TBS mint leaves Yogurt with Orange Essence(see below)Yogurt with Orange essence 1/2 cup low fat Yogurt1/4 tsp Orange Zest 2 TBS Orange Juice1/2 tsp Honey
Directions
In a medium bowl, combine chickpeas, onion and parsley, set aside
In small bowl whisk together olive oil, lemon juice, zest, cumin, cayenne pepper, salt and pepper if desired.
In another small bowl mix Yogurt, orange zest, orange juice and honey.
Pour the dressing over the chickpea mixture and mix well

Serve the chickpea salad over spinach and top with yogurt sauce and sprinkle with mint leaves.
