Beef & Black Bean Chili

Ingredients
1 pound lean ground beef (browned and rinsed)2 cans diced tomotoes (14.5 oz)1 can black beans (drained and rinsed), divided1 tbsp chili powder (or to taste-for more heat, use 1/2 Tbsp Chili Powder and 1/2 Tbsp Cayenne Pepper) 1 Cup Salsa (mild, medium or hot, to your taste)1-2 Tbls chopped white onion (optional)1-2 Tbsp grated, low fat cheddar (optional)
Directions
Brown ground beef, drain and rinse. Take half of the black beans and 1 can of the tomatoes, and puree in a blender or food processor. Add pureed black beans/tomatoes, remaining black beans, remaining tomotoes, salsa and chili powder. Mix well, and simmer for 15-30 minutes, until heated through. Serve topped with chopped white onions and cheese. Makes 5 1 Cup servings.
