Slimmed-Down Zuppa Toscana

Ingredients
lb ground Italian sausage1 tsp crushed red peppers1 large diced white onion4 tbsp bacon pieces2 garlic cloved, crushed8 cups fat-free chicken broth1 cup skim milk3 large potatoes2 cups chopped kale
Directions
Sautee Italian sausage and crushed red pepper in pot. Drain excess fat, set aside while you prepare other ingredients. In the same pan, sautee bacon, onions and garlic for approximately 15 mins. or until the onions are soft. Add the chicken broth to the onions, bacon and garlic. Cook until boiling. Add potatoes and cook until soft, about 10-15 minutes. Add milk and heat though. Stir in the sausage. Add kale just before serving. Delicious!

    I wanted to make sure that this one got the love it deserves. We had this last night and it was hands down a winner. Everybody loved it and it fed 6 people two being growing boys.
