Tilapia Stuffed Peppers

Ingredients
2 Gorton's Signature Grilled Tilapia Fillets4 bell peppers, medium sizeNon-stick cooking spray1/4 cup onion, chopped1/4 cup celery, chopped1/4 cup cilantro, chopped2 cups brown rice, prepared1/2 tsp saltFresh ground pepper1 cup water
Directions
Prepare Gorton's Signature Grilled Tilapia Fillets according to package directions, then lower oven temperature to 375°F.

In the meantime, core, seed and cut 1/4" off tops of peppers.

Bring a large pot of water to a boil, add peppers, cook 3 minutes, rinse in cold water and drain.

Spray a small non-stick skillet with non-stick spray and sauté onion and celery for 5-7 minutes over medium-high heat.

Blend prepared rice, onions, celery, cilantro, salt, pepper and cooked Tilapia fillets in a large bowl, breaking fillets into chunks.

Evenly distribute rice mixture into each bell pepper, place in a baking dish, add 1 cup water around peppers, bake at 375°F for 20-25 minutes and enjoy!

    I used frozen filets I had, not this advertiser's brand it's more complicated than I'd like: prepare the rice, prepare the veggies, blanch the peppers, etc. I thought it was okay, my DH really liked it. I'll try it again adding some lemon zest or lemon pepper seasoning to make it tastier. - 2/23/15
