Secretly Guilt-Free Spinach and Bacon Brunch Casserole

Ingredients
2 whole eggs10 egg whites (1 1/4 cups from a carton)4 cups milk (I use 1%)2 cups low-fat shredded cheddar cheese8 slices turkey bacon, crumbled2 cups fresh spinach, torn up
Directions
If desired, spray a large baking dish with cooking spray (not included in recipe calculations).

Beat eggs, egg whites, and milk together in a large mixing bowl. Add 1 cup of the cheese, the turkey bacon, and the spinach and stir.

Pour egg mixture into pan and sprinkle the other cup of cheese on top.

Bake at 350F for 60 minutes or until firm and cooked through.

Serving Size: Makes 12 servings.
