Cranberry Orange Muffins

Ingredients
1 1/2 c ground flax 40g Protein Powder - Vanilla Zest - of 1 orange 1/2 t Baking Soda 1/2 t Kosher Salt Stevia and/or honey to taste (optional)2 Eggsjuice of 1 orange1 cup fresh cranberrieswater as needed to thin
Directions
Beat eggs with orange juice; Mix dry ingredients together then gradually add wet ingredients. Fold in cranberries. If very thick I often leave it and make as cookies, (chewy and lovely) or thin down to a batter and pour into lined muffin tins. Bake at 350 for around 20 minutes
