Burrito Bowls

Ingredients
6 chicken breast2 cans black beans2 cans whole kernel corn2 hearts of romaine1.5 cups light sour cream1 tbsp chipotle peppers in adobe sauce (pureed)6 tbsp chopped fresh cilantro1 cup salsa2 cups white rice2 limes3 roma tomatoes dicedsaltpepperlemon pepper
Directions
1. Salt, pepper and lemon pepper, grill till cooked.
2. Cook rice according to package directions.
**While rice and chicken are cooking:
3. Drain corn and place in a bowl
4. Drain and rinse black beans and place in a bowl.
5. Take 2 hearts of romaine and chop and place in bowl.
6. Chop fresh cilantro and place in a bowl.
7. Juice 1 lime and mix with 1 tsp of salt, set aside.
8. Mix 1.5 cups sour cream with 1 tbsp of pureed chipotle peppers, add a little cilantro and juice of a lime. Whisk till mixed.
9. When rice is finished cooking fluff with a fork and put in large mixing bowl.
10. Pour lime/salt mixture over rice, sprinkle 1.5 tbsp over rice and mix.
Assemble bowl however you would like and enjoy!

Serving Size: Build your own bowl, 1/2 cup rice, 1 cup lettuce, 1/4 cup black beans, 1/4 cup corn, 1/4 cup tomatoes, 1 tsp salsa, 1/2 chicken breast, 4 tsp sour cream sauce
