Dixie's Stuffed Jalapenos

4 jalapenos, split lengthwise and seeds removed4 ounces cream cheese, softened1/4 cheddar cheese, shreddedSeveral dashes Tapatio or your favorite hot sauce (optional)
Preheat oven to 400 degrees F.
In a small bowl mix cream cheese, cheddar cheese and hot sauce.
Fill each of the jalapeno halves with the cheese mixture.
Wrap each stuffed pepper in one slice of bacon. Try to have both ends of the bacon end up under the pepper.
Place on a baking sheet.
Bake for 20-25 minutes or until the bacon is chewy-crisp and the peppers are softened.
Let cool a little before serving.
Serving Size=1 half jalapeno: makes 8 servings
