500 gm Mutton leg, shoulder, or ribs1 inch Ginger root4 cloves Garlic2 tsp Fennel seed2 tsp Cumin seed1 tsp Turmeric1 pc Star AniseI red onion, cut into 1/8s1 stick Cinnamon5 pods CardamomSaltBlack Pepper1 tsp Chicken Powder
Grind the spices, make into a paste with the ginger and garlic, lightly roast the paste in a small amount of oil. Cube the mutton, and season it w/ salt and black pepper. Toss mutton cubes with spice paste and marinade for 1 hour. Cover with water and bring to a boil with the onion, cinnamon, cardamon. Simmer for at least two hours, until mutton is tender. Garnish with fried shallots and celery leaves.
