Pumpkin Protein Bars

3 1/2 cups quick cooking oats1 1/2 cups dry skim milk4 scoops vanilla protein powder1/4 cup ground flaxseed meal2 tablespoons brown sugar2 teaspoons cinnamon1 teaspoon cloves1/2 teaspoon nutmeg1 teaspoon salt2 large egg whites, beaten stiff1/2 cup agave nectar1/4 cup blackstrap molasses1/2 cup apple sauce3/4 cup canned pumpkin2 teaspoon vanilla
Preheat oven to 325 degrees and oil a baking dish. In a large mixing bowl combine oats, instant milk, protein powder, flaxseed meal, spices, salt and brown sugar. Stir well to combine.
In a separate bowl, whip the egg whites, fold in agave nectar, molasses, pumpkin, vanilla extract and applesauce. Add the egg white mixture to the dry ingredients and stir by hand to combine. Pour into prepared pan and smooth top to flatten. Bake 30 minutes, or until top is dry and edges are lightly golden. Remove from oven and cool in pan 10 minutes, turn out onto cookie rack and cool completely. Cut into 16 bars.
Makes 16 servings.

Well, I liked this for a one-timer, because I was looking for a healthy granola bar type recipe, not a bar cookie. This is a good size, somewhat moist, holds up. Like the protein. I used buttermilk powder and Arbonne vanilla protein powder. Contact me if you need some. I'm honest and not rabid. - 4/21/08
