Ingredients
12 ounce(s) whole wheat linguine or spaghetti 6 ounce(s) Chinese pea pods, strings removed, and each cut crosswise into thirds 1/4 cup(s) creamy peanut butter 3 tablespoon(s) seasoned rice vinegar 3 tablespoon(s) soy sauce 1 tablespoon(s) brown sugar 1 tablespoon(s) minced, peeled gingerroot 1 tablespoon(s) Oriental sesame oil 1/4 teaspoon(s) ground red pepper (cayenne) 1 small garlic clove, crushed with garlic press 2 medium carrots, shredded 1/2 small (equal 3 cups) head red cabbage, thinly sliced 12 ounce(s) boneless, roasted chicken, pulled into thin strips
Directions
1. In saucepot, prepare linguine in boiling salted water as label directs. During last minute of cooking, add pea pods. Drain linguine and pea pods; rinse with running cold water to cool; drain again and set aside.


2. In small bowl, with wire whisk or fork, mix peanut butter, rice vinegar, soy sauce, brown sugar, ginger root, sesame oil, ground red pepper, garlic, and 3/4 cup very hot tap water until blended.


3. In large bowl, toss linguine, pea pods, carrots, red cabbage, and chicken with peanut-butter sauce. Cover and refrigerate if not serving right away.
