Orange marinade & sauce for salmon

6 Tbs fresh squeezed Orange Juice3 Tbs lite (low-sodium) soy sauce2 Tbs Sesame Oil1/2 inch piece of ginger, grated or finely chopped
Wisk all ingredients together. Marinate salmon fillets, skin side up, for 30min-1 hour. Bake (350 degrees) or grill salmon until done (approx 10 minutes).
While salmon is cooking, put marinade in a small saucepan. Bring to boil, and continue to boil, on low heat, for approximately 3 mintues.
Serve sauce over fish and/or rice. Sauce works will for chicken as well. Marinate chicken longer (2-3 hours in refrigerator)
Calories do NOT include fish - only sauce.
