Lighter Brown Sugar Cinnamon Sweet Potatoes

Ingredients
3 medium sweet potatoes~15 sprays of I Can't Believe It's Not Butter buttery spray~1/4 cup (unpacked) brown sugar~2 Tbsp. cinnamon(amounts above are those entered for nutritional info, can be altered with minimal effect to nutritional info to suit your taste)
Directions
Peel the sweet potatoes and then slice them into approx. 1/2 inch thick rings. If your sweet potato is very fat, you may want to cut some of the large dics into semicircles. Put all of the sweet potato slices into a glass baking dish (you don;t have to do this carefully, but make sure they are reasonably evenly spread in the dish). Spray the tops with I Can't Belive It's Not Butter spray and then sprinkle with cinnamon and brown sugar. Cover with aluminum foil and bake in a 350 degree oven for about 30 minutes, or until sweet potatoes are tender. Uncover and continue baking about 15 more minutes so the edges get chewy.

    I make a similar dish. I have made it at every family get together at their request for 2 years. It is such an easy recipe. I do make some changes. I use 1/4 cup of splenda, no margarine or can't believe it's not butter spray (but good idea) and a tbsp of cinnamon. My kids even love it. - 10/9/10
