Lemon Cookie Crisps

Ingredients
1 pkg. Pillsbury Moist Supreme Lemon Premium Cake mix1/4 Cup Oil2 eggs1/4 Cup Sugar1 Cup Powdered Sugar2 to 3 Tbsp. lemon juice
Directions
Heat oven to 375. In large bowl, combine cake mix, oil and eggs; stir wth spoon until thoroughly moistened. Shape dough into 1-inch balls; place 2 inches apart on ungreased cookie sheets. Place sugar in shallow dish and dip bottom of a glass into sugar and use to flatten cookies to 1/4 inch thickness.

Bake at 375 for 5 to 7 minutes or until edges are light golden brown. Cool 1 minute, remove from cookie sheet.

In small bowl, combine powdered sugar and lemon juice until smooth. Drizzle over cooled cookies.

Makes about 4 dozen cookies.

    Excellent and so easy. I had tried a similar cookie recipe starting with cake mix but it didn't turn out this well. I didn't make the glaze, but I might try it next time. - 3/15/09
