Marinara with Anchovy and Caper

1 Tbsp Garlic Minced1 Tsp Olive oil 1 Tbsp Basil Dried1 Tbsp Oregano Dried1 Tbsp Parsley Dried1/4 Tsp Salt 1/2 Tsp Black pepper 5 C Tomatoes Chopped1 Tbsp Anchovy paste 2 Tbsp Capers 1 C Water
Saute GARLIC in OIL over very low heat until soft, about 5 minutes.
Add HERBS-SPICES, stir 1 minute.
Add TOMATOES. Increase heat to med. Cover and simmer on low 20-30 min, stirring occasionally.
Mix in ANCHOVY. Mash with fork or potato masher to coarse texture.
Add CAPERS and cook 5 minutes.
Add WATER to desire consistency (use pasta water). Heat through. Adjust seasonings.
Serving Size: makes 4 generous servings
