Simple Carrot Soup

Ingredients
1/2 cup butter5 lbs carrots peeled/chopped3 packets chicken oxo2.5 onions chopped10 cups water
Directions
Cook onions in butter on low for 25 minutes, covered
Meanwhile peel and chop carrots
Add water and carrots, bring to boil
Add oxo, boil until carrots are soft (approx. 30 mins)
Remove from heat and puree

Serving Size: 1.5 cups
