Easy Cabbage and Chicken Soup

1 large head of cabbage4- stalks of celery1- medium sweet onion3- 13 oz. cans of Chicken Breast2- 15 oz. cans of black beans2- 15.5 oz. cans of Great Northern beans3 - 10 oz. cans of Rotel Tomatoes with Chiles2- 15 oz. cans of cut Green Beans1- 48 oz. box of Chicken Broth (fat free & lower sodium)Taco SeasoningGround CuminGarlic PowderSalt
Chop celery, onions and cabbage then sit aside.
Put 8 qt stock pot on medium heat then add onions, celery and cabbage. Pour Chicken broth over the top. Then add rotel tomatoes (with juice) and olive oil. Mix thoroughly. Let come to boil, then simmer for 1 hour. (add water, if it doesn't cover well enough).
After 1st hour, take chicken (after draining and flaking with fork) and all beans (drained) and add to the soup.
Add seasonings to the top then mix thoroughly and let simmer for another hour. (add more water, if needed)
You can add more or less seasoning to taste.
You can cook for a shorter period of time, but the flavors meld together better if you let them simmer longer.
Serving Size: makes approx. 15 bowls
