Cacciatore-style Halibut

Ingredients
4 4-oz halibut fillets1 red bell pepper, sliced into strips1/2 yellow onion, sliced into strips1 clove garlic, minced1 tbsp capers1 can diced tomatoJuice of one lemon3 oz white wine (pinot grigio or sauvignon blanc)1 tbsp chopped flat-leaf parsley1/2 tsp flour1 tbsp olive oilsalt and pepper to taste
Directions
Preheat oven to 375 F.
Use 1/2 tbsp olive oil to grease the bottom of an oven-safe dish.
Season halibut with salt and pepper, then place in the dish.
Bake for 10-12 minutes. While the fish is baking, prepare your cacciatore sauce.
In a large saute pan, heat 1/2 tbsp olive oil.
Add the bell pepper, onion, and garlic and saute for about 5-7 minutes, or till the onions become translucent.
Add the tomatoes, capers, lemon juice, white wine and sprinkle the flour over the mixture and simmer for 6-7 minutes. By this time, your fish should be ready.
Top the fish with 1/4 of the cacciatore sauce and serve immediately.
