Black Bean Tortilla Soup

Ingredients
1 large can chicken broth (6 cups)2 cans corn2 cans black beans2 tsp. mined garlic1 large onion, diced2 tsp. each chili powder and ground cumin4 large tomatoes, chopped1/2 tsp. each salt and pepper1 tbls. fresh cilantro, minced3 oz. corn tortilla chips - broken into smaller peicesOptional - FF Cheddar cheese, sliced green onion and FF Sour Cream and addtional tortilla chips as topping.
Directions
Spray stock pot with non-stick coating. Add 1 tsp oil and chopped onion and minced garlic. Saute until onion is soft. Add cumin and chili powder. Add beans, tomato and corn and saute about 5 more minutes. Break up totilla chips and mix into stock pot. Add chicken stock and season with salt and pepper. Bring to boil and simmer about 10 minutes. Stir in cilantro. If desired (I recommend this) you can blend this with an immersion blender until it's creamy or you can use regular blender adding a couple of cups at a time and blend until smooth. Serve with optional toppings and enjoy. Makes aprox. 10 1 cup servings.
