Triple Chocolate Muffins

1 3/4 cup old fashioned oatmeal1/2 cup cocoa1/4 cup chocolate protein powder3 tbsp Stevia1 1/2 tsp baking powder1 1/2 tsp baking soda1/2 tsp cream of tarter1/4 tsp salt3 egg whites1/2 cup Greek yogurt2 bananas, mashed1 tsp vanilla extract1 cup hot water1/2 cup mini chocolate chips1/2 cup walnuts, chopped
Preheat oven to 350 degrees. Line a 12 cup muffin pan with cupcake liners or spray with non-stick cooking spray. Set aside.
In a food processor (or blender), mix all of the dry ingredients together, except for the chocolate chips and walnuts. Blend until oats are ground.
Place dry mixture in a large bowl and stir in chocolate chips and walnuts. Set aside
In the food processor (or blender), mix all of the wet ingredients together. Pour over dry ingredient mixture and gently fold.
Scoop mixture into prepared muffin pan.
Bake for 12 - 15 minutes.
Serving Size: Makes 12 muffins.
