Baked Fish en Papillote with Tomatoes & Herbs

Ingredients
2 fish fillets, (250g raw) fresh or frozen & thawed4 drained canned plum tomatoes4 medium mushrooms, sliced1 clove garlic, minced1 tbsp chopped fresh basil or 1 tsp (5 mL) dried1 tsp chopped fresh oregano or 1/4 tsp (1 mL) driedPinch freshly ground pepper
Directions
Cut 2 sheets of parchment paper or foil, spray with non stick cooking oil. Place fish fillets in centre of paper. Spray with non stick cooking oil.
In small bowl cut drained tomatoes into small pieces, add mushrooms, garlic, basil, oregano and pepper, spoon evenly over fish. Fold foil to seal. Bake 400 f oven for 20 minutes or until flakes.
