Creamy Salsa Chicken Tenders

2 T olive oil2.5 lbs. chicken tendersFavorite seasoning (such as McCormick's Perfect Cajun spice)salt and pepper to taste2 C favorite salsa (I use Arriba Fire Roasted, Medium)1/2 C light sour cream (I use Daisy brand)1/2 C cilantro, choppedlime wedges
Heat olive oil in a large nonstick skillet over medium high heat.
Season the chicken to taste. Cook until golden, about 3 minutes per side; transfer to plate.
Add salsa to skillet and cook on medium heat, stirring, for 2 minutes.
Reduce heat to low; stir in light sour cream.
Return chicken to pan, cover and simmer over low heat for 5 minutes.
Sprinkle with cilantro; serve with lime and rice.
