Spinach Calzones

1 14 oz box light silken tofu1 lb frozen spinach, thawed and squeezed to release excess moistureDash nutmeg1 tsp salt2 lbs whole wheat pizza dough1/2 large red bell pepper3/4 cup red onionswhole wheat flower for dustingcornmeal for baking panMarinara sauce for serving if desired
Preheat oven to 425 degrees.
Blend tofu, spinach, nutmeg and salt in a food processor, blender or immersion blender. Blend in pepper and onions.
Divide dough into 6 pieces and roll each into a circle, 1/4" thick. Divide tofu mixture evenly between the pizza dough circles, fold the circles in half, pressing edges to seal.
Dust baking sheet with cornmeal, place Calzones on sheet and back for 20 to 25 minutes or until light brown.
If desired, serve with marinara sauce (not included in calorie count)
