Avocado Tomato Salad

2 large tomatoes seeded and chopped 2 large Avocados cut in large chunks Juice of 1 Lime 2 thick slices of Red onion cut in very fine strips 1 Salt & PepperOther ingredients that could be added:Black Beans, black olives, fruit (apples or citrus), peppersSalad may be drizzled with a little extra virgin olive oil.
Instructions for Avocado Tomato Salad:
Cut avocado in chunks, sprinkle with lime juice.
Combine with chopped tomatoes and strips f red onion. Salt & Pepper to taste.
The avocadoes and tomatoes should be approximately the same size. Serve immediately. I often prepare the entire dish ahead of time without the avocados and then add them at the last minute. Be sure to seed the tomatoes or there will be too much juice. Adjust lime juice so there's not too much liquid or to preference.
